Handpicked and hand sorted fruit crushed into small open top stainless-steel fermenters. The cap was gently punched down by hand three times per day. The wine was left on the skins for eight to fourteen days and then pressed to barrel to finish fermentation.

Aging

18 months in French oak barrels. 40% New.

Tasting Notes

The Big Sky Cuvée showcases the unique conditions of the 2021 growing season. With historically low yields, production was down but the quality was exceptional, offering excellent concentration with power and grace. Deep garnet in color, this wine immediately captivates with its rich aromatics—dark cherry, raspberry compote, and vanilla layered with hints of cocoa, nutmeg, and oak spice.

The palate is bold yet polished, offering a full-bodied experience with velvety tannins and a luxurious mouthfeel. Flavors of black cherry and cassis lead the way, complemented by mocha and a touch of barrel sweetness. Silky and expressive now, this wine is built to evolve gracefully over time.

Best enjoyed from 2025 to 2040—set a few bottles aside for future indulgence.
